I grow acres of sunflowers each year. The "maturity date" is typically when a crop is dry and the seeds are fully formed - ready to be combined. I think it is reasonable to expect full blooming at about 70 days with a 100-110 day maturity date plant. Sorry for the person who wanted them for the wedding. Its like field corn, or sorgham on the dates.
