This beet in called cylindra, because it isn't round, but a cylinder. Much easier to cut, or if you need to peel them. They stay tender over a wide growing range, and are very sweet. I stopped trying other varieties, because these are so much easier to cut, especially if you want even slices. They grow mostly out of the dirt, so with our horribly dense clay soil, these are perfect. Even tried borsht with them, and the Russian bee keeper's wife said that it tasted authentic. So don't expect picture perfect round traditional beets, but a utility beet that can't be beat... [sorry].
